MHS audits
The performance of Meat Hygiene Service staff in approved premises in Great Britain is subject to audit by the Food Standards Agency. The audits determine whether MHS operations, practices and activities comply with the requirements specified in the MHS Manual for Official Controls, including relevant legislation and codes of practice.
The annual report sets out the results of audit visits to premises by the FSA's Veterinary Meat Hygiene Advisers during the year in question. It acknowledges areas where the MHS performed well and identifies any areas of weakness, with recommendations for improvement in MHS performance where appropriate.
